This is a leg muscle that goes up from the knuckle to the rump and weighs between 1 and 2 kg. It is a meat that is very marbled and is very tender and juicy, so it is very popular.

RECOMMENDATIONS: Defrost in the fridge 24/48 hours before use. Always bring up to room temperature 1 hour before cooking. Great for making thin ﬁllets, carpaccio, and for breaded cutlets. Can also be served as a steak cooked on a baking stone, especially for very rare steaks.
